Tennis Bisuits A very old recipe and Christmassy looking.
6oz (170g) margarine 2.5oz (70g) icing sugar 6oz (170g) flour 2oz (56g) cornflour 1/2 tsp vanilla essence 1 Tbsp each of cherries, peel, angelica and finely chopped almonds.
Roll into small balls and flatten. Place a piece of cherry on each. 180 C for 15-20 mins. As angelica is hard to come by these days, it can be left out.

Had some great ones at a school do yestereday - Mallowpuffs with some white chocolate onthe top,with a Jaffa on top, a couple of slices of green mint jelly lollies resembling leaves and a couple oftiny silver icingsugar balls - very festive!
