Ha, thats what we're having for tea, but I just "do it out of my head" so recipe and measurments are approx.
I like ours quite spicy, so add the curry powder, but can be made without.
4-6 drumsticks depending on size etc.
1 can apricots.
1 onion sliced in rings.
parsley, and herbs(anything suited to chicken)/ chicken seasoning or 1/2 tspdried chicken stock
1 tsp curry powder.
1 tsp bisto gravy powder.
1 TBSP brown sugar
2 TBSPS sour cream
Place chicken, and onion in the casserole dish.
Drain apricots (reserving the juice) and place over the top.
In a jug mix the herbs, stock, seasonings,gravy powder, curry powder and brown sugar together with the apricot syrup, adding a bit of water if necessary to ensure there is enough liquid to cover the chicken.
Cook for 1-1 1/2 hrs at around 170deg,
At the end of the cooking time, stir thru the sour cream just before serving. Serve on a bed of rice.
*I find by adding the sour cream this thickens it enough to make a gravy/sauce, but you could thicken the juices as you do for gravyand add less sour cream or eliminate it if desired.
