How much water do I need to cook 2c's rice

absorption style - note long grain rice as that is all I have, I know for Paella it is meant to be medium grain rice because it absorbs more liquid.

I don't want a watery Paella so how much water/stock should I use for 2 c's of long grain rice!

Just for the rice 2 cups but there will be other ingredients in paella that will absorb some of the liquid as well - also would be better to use stock than water, preferably fish or chicken

good point the only other wet ingredient is a 440 tin of chopped tomatoes.

Any idea of amount of stock then!

Doesn't it say in the recipe!I just tend to add until it looks right - same as with risotto

I'm not really following a recipe and it says short grain rice.

For a paella I would use twice the volume of stock to rice - presuming that you are using a paella pan with its large surface area and rapid evaporation.

The tomatoes should be cooked right down as part of the soffrito and won't contribute much extra liquid.
