Use Xmas tree cookie cutters & maybe few of those little silver balls (cant remember what they are called) for decoration.

Use a thistle shortbread press. When packaging it, tie with a tartan ribbon.

I added some finely chopped lavender leaves (edible lavender) one year. They were really nice

There are awesome xmas sprinkles in red and green available quite cheaply in the baking section at the supermarket, simply sprinkle these over a white icing or sugar/water base on the biscuits.
I use my xmas tree cutter, dust the finished productwith sifted icing sugar,or green jellycrystals, and decorate the tips with coloured cashous (the hard ball things mentioned above.)
Tip:
Xmas shortbread does go soft quite quickly, so vaccuum seal your cellophane bags or store in a decorated gift container that is airtight and sealed.
