GLUTEN FREE MUFFINS

Please has anyone got easy fail safe recipes, my boy is sick of choc chip ones.tried with berrys he loved them even tho they didnt work lol.

tjfs - I have a friend who is a celiac so I just use my normal recipes for muffins, cakes, puddings etc. and replace the flour with Orgran All Purpose Plain Flour and make sure I use gluten free baking powder etc. They turn out a little heavier but haven't had a failure yet. Have made banana choc chip muffins, savoury muffins, cheese muffins, berry muffins, profiteroles, choc cake, steamed pudding - all sorts of things.

BANANA MUFFINS
(to make gluten free muffins, substitute the flour with 1.5 cups GF flour).

2 cups high grade flour4 teaspoons baking powder

1/2 teaspoon salt1/2 cup sugar

100g butter1 cup milk

1 egg

1 or 2 ripe banana (depending on the size of the bananas)

1 Tbsp sugar1/2 teaspoon cinnamon

Combine first three ingredients in a bowl.

Add sugar.

In another container, melt butter, add milk and egg.Beat to combine.

Cut banana into small pieces.
(don't try mashing the banana - you don't get the same result).

Add banana and liquid to dry ingredients.Be careful not to overmix.

Divide between 12 standard size muffin tins or 24 mini muffin tins.

Combine the tablespoon of sugar and half teaspoon of cinnamon.Sprinkle over the top of the muffins.

Bake at 220 degrees C for 10-15 minutes for larger size and 10 minutes only for mini size.

Stand for 2-3 minutes before removing from pans.

Note:You can substitute other fruit for the banana, e.g. apple, peaches, etc, but always chop the fruit, don't mash it.
