This is a lovely light batter I use for banana and apple fritters. Great on fish as well. 2 eggs separated 2 tablespoons flour 2 teaspoons water Beat the egg yolks flour and water. Fold in the beaten egg whites.

I use a similar batter for whitebait, when I get some .it's been quite a while. The fritters puff up but & still with the bait flavour coming through.
