Saute some red onions, add garlic, cajun and mixed herbs. Add cooked chopped chicken (I use leftover breast). Stir through halved cherry tomatoes. One big dollop sundried tomato hummus and one big dollop cream chees. Stir till cheese melts. Mix through cooked pasta, I use spagetti, and stir through a little grated cheese. YUM!
Could use pasta shells etc and make way more, and put in oven dish, sprinkle grated cheese on top and bake.

Creamy Mussel Pasta Sauce
24 Mussels (chopped) 50g Butter 1 Onion (diced) 1 Clove Garlic (crushed) 1/2 cup White Wine 250g Sour Cream 2 Tblsp Tomato Paste Salt and Pepper
Saute onions in butter. Add mussels and garlic. Add Wine. Simmer for a few minutes. Stir in tomato paste and sour cream. Season to taste.
Serve on pasta.

Gboysmum I make a similar dish but add a few rashers of bacon and a tin of evaporated milk instead of the cheese, a real delight
