Cooking fresh squid

Stir fried some fresh squid for dinner tonight- cut it into rings and strips; added chopped onion and garlic and a good tablespoon of thick asian hoi sin
sauce just before serving. The flavours were delicious but the squid was chewy. Any advice on cooking squid so it is tender gratefully received.

The traditional way of tenderising squid is to beat it against a rock. In Greece, they grab em by the tentacles and throw them on the rocks several times to tenderise. Also, it only needs to be cooked quickly.

Mix the pulp of a green kiwifruit through the squid to tenderise it. I normally leave the squid in the kiwifruit for an hour or so before I want to cook it. Rinse off the kiwfruit pulp, pat the squid dry and cook as per normal (which is normally quite quickly!).

Also-finely score the skin on any biggish bits.Cross-hatch it.I agree with the kiwi.If you don't have any,soak for an hour in milk.
