I have a recipe that uses 1 cup caster sugar, 1 cup water and 1 tsp gelatine. To make a firmer marshmallow would using 2 tsp gelatine work!

Yes. you can add flavour too if you want - goodies like vanilla essence, lemon zest and juice (have found it sets fine still), almond essence, rose essence, etc.

You can add a packet of dissolved jelly crystals to the mix.
