Banana prawns (ie buying Australian not Asian)

I've really been put off buying Asian seafood, thanks to a number of links that have been posted on here in the past.

It has been recommended that I look out for banana prawns on special, so I see that Countdown have them for $28 per kilo at the moment and I'll check out the local fish wholesaler too.

Can you please tell me what I can do with the heads and shells, to make the most of paying that price!

I compost them.

I make a stock from the shells and heads.Barely cover them with cold water, bring to a simmer and simmer 20 minutes, no longer.Strain through a fine sieve or muslin.
Use the stock in paella or other rice dishes, or to add flavour to a seafood stew or soup.You can freeze the stock for up to three months.

sumstylemake sure you do not buy Tiger prawns - they come from Australia too - but are farmed. As far as I know only the Mooloolaba (or similar) and Banana prawns are wild caught.
