Cookie dough

I am about to make some nut cookies. The recipie includes butter & eggs. Is it OK to mix a double batch, bake half today and store half the dough in the fridge to be baked tomorrow, or, preferably,put half in the freezer and bake when all the first lot have ben eaten! I do not have sufficient trays to bake all at once.

It should be fine, I do it all the time. Sometimes in the fridge for a few days, if longer in the freezer. When freezing I either make a sausage shape & cut it before cooking, or make the individual biscuits & free flow them then just take out the number I need to cook. Sometimes this works better if I only need a few.

yes cookie/biscuit dough is best when kept in a fridge for a day stops the biscuits spreading on the tray.
