This is easy and very tasty,
Chicken and three cheese lasagne
150g dried lasagne
2 C cooked shredded chicken or smoked chicken
250g cottage cheese
¼ C chopped sundried tomatoes
Salt and pepper
1 Jar of your favourite pasta sauce
1 C grated tasty cheese
¼ C fresh grated parmesan cheese
Cook pasta to packet directions, drain and set aside. Mix chicken, cottage cheese and sundried tomatoes. Spread half of this mixture into an oven proof dish, then a layer of pasta, then pasta sauce. Repeat these layers once more then sprinkle with combined tasty and parmesan cheeses. Bake at 180oC for 25-30 minutes till golden. Serve with a green salad and crusty bread.

An oldie but a goodie - even the 10yr old ( who hates "hot" food - loves it.Use 1 pkt onion soup mix, 2c cream ( or 1 of milk and 1 of cream - or 2 of milk - whatever you have handy and whatever suits your "richness - fat - quota! ), 1 or 2 tsp regular curry powder, 1 can ( drained ) of button mushrooms in brine, or a handfull of fresh mushrooms, or a bunch of spinach, or thinly sliced corgettes - whatever is handy.Basically, make a sauce from the liquid and soup mix, cook till it thickens, stuff the other stuff in it ( cook till vegs are cooked thru - if you started with raw veg ), chuck in some cold cooked chicken - however much you have, heat all through, serve on rice or noodles. YUM.
