A treat to sweeten the sour

lime flavoured shortbread with a lime icing.

3/4 cup butter
1/4 cup granulated sugar
1/4 cup icing sugar
2 tablespoons grated lime zest
2 tablespoons fresh lime juice
1/4 teaspoon salt
1 1/2 cups flour

For the glaze
3/4 cup icing sugar
5 teaspoons fresh lime juice
1 teaspoon grated lime zest

Cream butter and sugars until light and fluffy. Add the lime zest, juice and salt. Add flour beating until the dough is just combined. Shape into a log and flatten into a rectangle. Wrap in plastic and refrigerate for an hour or up to a day. Slice into 1/4" slices and bake at 350 degrees until light golden in colour. Combine the glaze ingredients and spread on when cookies are cool.
