Crayfish want to freeze them

is it best to cook them first then freeze them. Or freeze them uncooked!

Cook, split down the centre and squeeze lemon juice on them then wrap in gladwrap and freeze - ideal for Crayfish Mornay - defrost, chop the meat and put back in the shell with the mornay sauce then under the grill for a few minutes prior to service.

someone told me once that frozen raw they last 3 months . cooked they last one month . i have actually frozen one by accident raw . was intending to put it to sleep before cooking it and forgot to take it out . i just thawed it out and cooked it up . no difference in taste . by the way , you lucky bastard .would love some crayfish right now ;)

They last a lot longer than that.I freeze raw as I find that cooked they dry out
