Best cheese to use!

Would would be the best tasting cheese to use to top crusty bread and salami please!

I guess it is up to your own personal tast. I personally would not want to drown out the taste of the salami ( although I do like a nice aged cheddar like Linkwater. I would probabyl go for a lighter cheese like a Swiss type.

Emmental (sp) would be good - cheesy but not over-powering - looks cool when its sliced as well because of the holes!I'd definitely go for something European to go with salami so if not that then maybe Gouda - I like the aged ones.
