Does anyone have recipes for pasta salads or

something similar that would freeze for lunches!I can do soups and he will take leftover stir-fry but I need some new healthy ideas. He's not keen on making sandwiches and is allergic to all seafood. Would like to have something he can just grab as he leaves early. He does cook in the evenings, but has got into the habit of just grabbing fruit and yoghurt and I think he needs some protein at lunch.

fresh and quick to make:
salads:
1.tinned chick peas, sun dried tomatoes, red onion, vinaigrette, parsley
2.mushroom, sauteed in garlic and lemon juice and left to cool in cider vinegar, add parsley and red onions, chill.
3. make a dhal and serve cold
4. pasta, sun dried tomatoes, olive oil, garlic, walnuts
5. lentil salad (cook lentils, add lemon juice and olive oil, seasoning) add red onion, garlic, chili powder.

Yoghurt is protein.
Pasta salad has no protein - it is just carbs.
So if you want your hubby to eat protein then let him have his yoghurt.

Lunch box Pasta salad

150gms pasta bows
12 cherry tomatoes (or 4 tomatoes quartered)
1 green capsicum seeded, cored and diced
100g cheddar cheese cut in small cubes.
1/2 cup toasted pine nuts (optional)

Cook pasta in boiling wateruntil el dente (*firm to the bite, approx 7-9 mins*)
Drain into a sieve and cool under cold running
water.

Combine all ingredients in a large bowl.

Pour dressing over the top and toss to combine.

*Serves 4. *

Dressing
2 TBSPS salad oil
2 TBSPS white wine vinegar
2 TBSPSfreshly squeezed orange juice
1 TBSPS chopped parsley
Salt and freshly ground black pepper to season

Place ingredients in a screw top jar and shake
vigorously.
