SWEET CORN CHILLI!
500 g of lean minced meat (can be turkey, pork or beef - even tofu)
One large onion diced
And various seasonings - to each his own but celery salt, black pepper, onion, garlic and chilli powders and sometimes, cumin and cayenne pepper too
Pan cook the meat and onion together with half the seasonings in a little oil
Then:
Mix together the remaining spices & a cup of water with:
1 can of red kidney beans or mixed beans
Plus
1 can of maple beans or a quarter cup of maple syrup (the real stuff only the other stuff will make it too sweet)
1 yellow and 1 red capsicum pepper diced,
3 to 4 large stalks celery chopped
Couple of nice sized tomatoes chopped
And 1 can of corn ears or cup of frozen corn ears
Bring to a steady simmer
Then add the meat mixture
Add a small can of tomato paste to thicken it up
And for an extra sweet style use ketchup/tomato sauce instead of the tomato paste
Let it simmer for an hour and it’s done!
