Black olives

I have discovered two jars of black olives in my pantry!Any suggestions how I can use them other than pizza and pasta!

Greek salad - cucumber, tomato,red onion, feta, black olives, oregano, olive oil and lemon juice.

Orange, red onion and black olive salad with red wine vinegar and olive oil.

I use them, along with the stuffed green ones and caper berries in my Meditteranean chicken dish.

black okives make a good tomato/olive pesto, use fresh garlic, salt/pepper/herbs of your choice serve with cheese, pasta, cold meats

Black Olive Tapenade.

175g pitted kalamata olives
4 anchovy fillets, drained on paper towel, coarsely chopped
1 tbs drained capers
1 garlic clove, finely chopped
60ml extra virgin olive oil,plus extra

Place the olives, anchovy, capers and garlic in the bowl of a food processor and process until finely chopped.
With the motor running, gradually add the oil in a thin, steady stream until well combined and a smooth paste forms.

Transfer to an airtight container and pour over extra oil to cover the tapenade surface (to prevent oxidisation).
