Simplest thing ever - Irish stew.1 kg neck chops; 1 1/2 - 2 kg potatoes, peeled (although I often don't); 500 gm onions thickly sliced; salt; freshly ground black pepper; 2 cups water; 2 bay leaves; dried mixed herbs to taste.Slice some of the potatoes and put in bottom of crockpot.Add meat, onions and the rest of the potatoes which have been halved.Add rest of the ingredients, cover and cook on low for 4 - 6 hours. The sliced potatoes break down with cooking and thicken the stew.Yummy!

Creole Lamb.
Trim as much fat as you can.
1 onion, 1/2 capsicum, 3 tsp oregano, 3 tsp ground coriander, 2 tsp cumin, 1 tsp chilli (or use more pepper), salt and pepper, stock, 1 tbsp tomato paste, 2 zucchini.

Slice all, mix, toss in casserole or slow cooker, simmer for a couple of hours or until tender, add the zucchini 20 mins before then end though else they go too squishy.
MM. Yum.
