Chcoclate Eclair's Recipe Please!

This recipe is great.I didn't have vanilla so used a bit of coffee essence.Also, I make a hell of a mess piping so just spooned teaspoons of mixture onto tray and they were awesome

Chocolate Eclairs firm

75g butter,
1 cup water,
1 cup plain flour,
2 tsps sugar,
1/2 tsp vanilla essence,
3 eggs.

Combine butter & water in saucepan, bring to boil, quickly add flour & beat with wooden spoon until mixture leaves the sides of the saucepan.
Remove from heat.
Add sugar and vanilla.
Add eggs one at a time, beating well after each addition.
Pipe strips of the mixture onto greased oven trays.
Bake @200oc for 30mins or until eclairs are puffy.
When cool, cut slits in the sides, fill with whipped cream and ice with chocolate icing.

NOW HERE'S THE SECRET TO FIRM ECLAIRS - KEEP THEM IN OVEN AFTER THE TIME IS UP. THEY WILL COOL NICE AND FIRM
