Vegetable side dishes.!

Other than salad and roast vegetables. What do you have! Any vegetables, any way!. So stuck for ideas. I'm tired of serving up corn, peas and cauli and broc with cheese sauce.

One of our current favourites is Brussels sprouts, boiled until tender, drained and dressed with butter, salt, pepper and diced feta.It goes with everything.

Potatoes & Onions with Vinegar

Serves 4

8 small onions
12 small potatoes (golf ball), preferably red
2 tab butter
3 tab balsamic vinegar
½ tsp saltpepper
6 sprigs thyme

Peel onions, half-peel (spiral) potatoes.Put in oven dish just large enough.Mix other ingredients and pour over, bury thyme under veges.Cover and bake 170C 2 hours, turning over every 30 min.

Should end up dark brown.Serve with braises and roasts.

Lebanese Spicy Peas

serves 6

1 tab olive oil
1 large onion, finely sliced
1 cove garlic, sliced
3 large tomatoes, coarsely chopped
2 tab tomato paste
2 tsp salt
½ tsp black pepper
½ tsp allspice
640g (4c) peas (frozen are fine)

Sauté oil, garlic and onion over high heat until lightly browned.

Add rest of ingredients and 750 ml water.Cover and simmer briskly 20 min until sauce has thickened and peas are tender.

Serve hot.

thinly sliced spuds layered with onion slices, pumpkin, silverbeet. Salt and pepper layers. Add milk to say 1/2 way. Grate cheese on top and bake mmMmm

courgettes, chopped onion, tomato paste, salt pepper, mushrooms, corn, tin of chopped tomatoes, plenty of water. Cook formins. Serve with mashed spud, pasta. Goes great with steak, fish, chicken, well anything really or great as a vegie dish:) Top with cheese before serving also!

Kumara mash, thinly slicedsauteed cabbage with crispy bacon sliced thru it,
leeks and creamy white sauce. Stuffed mushrooms or peppers. This creamy pumpkin cubes is yum:
For about 4 servings:
400gms cubed pumpkin
2 tsp flour
1 clove garlic, chopped
1/2 tsp curry powder (optional)
1/4 tsp salt
1/4 cup cream, or coconut cream
1 spring onion chopped.
Cut pumpkin in 1cm cubes. Toss to coat in flour.
Add remaining ingredients except spring onions.
Cover and microwave at full power, for 5-8 mins, gently stirring around every 2-3 mins,throughout the cooking process.
Sprinkle over chopped spring onions before serving.

Rice Stuffed
Silverbeet Leaves

Ingredients:
Big bunch of silverbeet
(preferably about 12 leaves)
1 onion, finely chopped
2 heaped Tbls of peanut butter
¼ tsp cumin seeds
1 cup rice
1 can chopped tomatoes
1 Tbls dried oregano
½ cup grated cheese (optional)
2 Tbls oil
Salt and pepper
Method:
Lightly fry the onion and cumin seeds in oil, add the
rice, fry briefly then add 2 ½ cups water and ½ a
tsp salt. Bring to the boil, turn down to a low simmer,
cover and cook for 12 mins, then turn off and leave
the pan tightly covered for a further 12 mins.
Add the peanut butter to the rice, stir to combine.
Add the cheese to the rice and peanut butter
mixture, stir to combine.
Trim the silverbeet leaves from the bunch and run
the edge of a wooden spoon along the spines of
the silverbeet, pressing firmly to crush the spines.
This makes the leaves much easier to roll up.
Divide the rice mixture between the 12 leaves
and roll them up.
Place the rolled up leaves into a shallow baking dish.
Blend the can of tomatoes with the oregano, ¼ tsp
salt and a cup of water and tip over the leaves.
Cover tightly with foil and bake at 170°C for an hour.

Ratatouille

Ingredients

1 tbsp oil
1 onion
1 aubergine(eggplant)
1 red pepper
half a green pepper
1 clove garlic
2 tins of tomatoes

Method

Heat the oil in a saucepan. Chop the onion and fry for one minute. Roughly chop the peppers and aubergine, add to the pan and fry for one minute. Crush the garlic and add to the pan with the tomatoes.

Bring to the boil, put the lid on the pan and simmer for 30 minutes, stirring occasionally. Take the lid off the pan, stir well and simmer for another 15 minutes.

Season with plenty of fresh black pepper and serve.

Coleslaw is a fav in this household. Last night roasted some cauli for a change, everyone enjoyed it. Just flavoued it with garlic & lemon juice, bit of o/oil and s&p. Then few min before serving sprinkled with parmesan,and popped back in oven until melted.

KUMARAGRATIN

4-5 Kumaras (or a mixture of potato and kumara)
4 rashers of Bacon
1 Onion - chopped
1 packet of maggi Bacon and Onion Soup powder
Some cream
1 cup (or a handful) of grated cheese

1.Preheat oven to 180'C
2.Fry bacon and onion
3.Peel and slice kumara into reasonably thick slices
4.In a bowl, mix the soup mix, sauteed onions, bacon (chopped), cheese
and some cream through the Kumara slices
5.Pile the whole lot into a lightly greased large baking dish
6.Bake at 180'C for arond 45mins

Apricot Vegetable casserole is simple and real yummy. 1 pkt maggi apricot chicken and 1 tin of apricots ( i use vegez only) then add any vegez Eg: last night we had whole brussel sprouts, sliced carrots, kumara, onions and chicpeas. You can also bake your potatoes whilst baking your casserole. We also had cauliflower. Steam cauli, once almost cooked place in oven proof container and cover with this mix of sour cream, grated lemon rind and parmesan cheese then sprinkle with bread crumbs, bake 15mins. Yum yum.
