Baking that stays fresh

Would like to send some baking to SIL who is serving overseas, will take up to ten days to get to him, any sugestions, I had thought a fruit cake would be ok

Are you able to vacuum pack as that should prelong life.

Definitely vacuum-pack if you can. Also - cakes made with oil such as lemon yoghurt cake & carrot cake stay fresh for a long time.

ummmm how would I vacuum pack, take it to the butcher maybe LOL

unfortuanately both my Aunt Daisy cook books have gone awol. If you can get hold of an old pre 60's one, there are a couple of baking recipes in it for sending oversea's. One is a fruit cake and not sure if other is cake also or a biscuit.
Like I said the books are awol, packed in garage. Is most frustrating as I want a recipe for carrot cake which is out there also lol.

Don't laugh, your local butcher would probably be more than happy to do that if you explain your plans.
