Would like to send some baking to SIL who is serving overseas, will take up to ten days to get to him, any sugestions, I had thought a fruit cake would be ok

Are you able to vacuum pack as that should prelong life.

Definitely vacuum-pack if you can. Also - cakes made with oil such as lemon yoghurt cake & carrot cake stay fresh for a long time.

unfortuanately both my Aunt Daisy cook books have gone awol. If you can get hold of an old pre 60's one, there are a couple of baking recipes in it for sending oversea's. One is a fruit cake and not sure if other is cake also or a biscuit. Like I said the books are awol, packed in garage. Is most frustrating as I want a recipe for carrot cake which is out there also lol.

Don't laugh, your local butcher would probably be more than happy to do that if you explain your plans.
