Yeah thats what I am going to do.I don't really like it.I think its the colour that puts me off.I don't actually mind it once I am eating it.From memory the last time I cooked it I tipped a bottle of ginger beer over it in the crock pot.

If it is from the supermaket I wash to sticky red goo off then soak it for a few minutes, drain and replace with fresh water, add brown sugar, malt vinegar, peppercorns, an oniion studded with cloves, a halved and unpeeled carrot and the peel of an orange.I also slice it when it is cooked, put into a lasagna type dish and top with mashed potato and carrot with a pinch of mustard added and grate cheese over the top and bake. You can also partly cook shredded cabbage and mix this through the mash.

You can cook it the day before, slice it, put in oven dish with a bit of the liquid & heat it in the oven the following night when needed...yum..can't taste any difference.

I substitute balsamic vinegar for malt vinegar - it adds a whole other dimension.
