I don't see why you can't adapt this to use vegetables for a vegetarian option. A bit fiddly, but worth it: Mix with enough water to make a stiff paste - 2 teasp. ground coriander, half teasp ea turmeric, chili & cumin, & 2 teasp curry masala (home made is best, otherwise just use a good quality curry powder)METHOD: Heat 3 tabs oil, add chopped garlic & stir fry 30 secs - add the spice paste & stir for another minute. Add a couple of finely chopped onions & stir fry at least 10 mins to a max of 20 - or until caramelised. Puree the mixture, then return to pan with 150ml cream & 150ml coconut cream. Add chicken/ veges, whatever & simmer approx 15 mins, thinning with water if necessary. The sauce is tradionally thickish. Add a tablespoon of finely chopped fresh coriander, 2 teasp ground almonds & 2-3 teasp garam masala, salt to taste & cook a final 5 mins. posted by alidotcom"

Hope that helps.:-))
