Is it a whole neck or cut into chops I would casserole in the usual Venison flavourings like red wine onion garlic mushrooms pinch of chilli flake Bay leaves rosemary juniper berries(I hear are good too) then slow cook for a very long time with salt and pepper could make a very nice winter meal though rich I haven't cooked a neck before though myself.
