From my trusty old Edmond's Cookbook -
VERY SLOW OVEN = 90°C - suitable for e.g. meringues
SLOW OVEN = 120°C - suitable for e.g. pavlova
SLOW-MODERATE OVEN = 150°C - suitable for e.g. rich fruit cakes
MODERATE OVEN = 160°C - suitable for e.g. shortbread
MODERATE OVEN = 180°C - suitable for e.g. biscuits, sponges.....

Hope that helps.:-))

...and a hot oven was 200*C plus.Cooks making scones in old coal ranges without temperature gauges used to throw a sprinkle of flour onto the hot oven tray to judge the temperature of the oven according to how quickly the flour browned on the tray.

I cook my Christmas cakes at 125 deg.C.
I don't care how long it takes, a Christmas cake, will not always look burnt but can taste burnt.Raw is not good either. If unsure put a knife into the centre, not a skewer, they can sometimes fool you. Icing or an ornament will cover the cut.
You will know when its cooked, it will smell Divine.
I used to cut mine in half. before icing in our home bakery, no one ever said a thing coz they never found out, lol. better to be safe.
