let vanilla ice cream (or any flavour you like really) soften a bit then fold throught the cookies and freeze again

Eat them as is ... or with a nice cup of hot chocolate on the side ;)

Melt equal quantities of choc and cream gently in a large pot.Cool slightly and add 1/4 cup baileys (optional) or orange juice.Whizz up biscuits and enough to choc mixture to make firm dough.Roll into truffles and dip into extra melted choc!I freeze some and put on top of cakes or take one... or two out for a small dessert with coffee!

biscuit cake as follows.

*The biscuit cake*

Ingredients:

250gwine biscuits (or any broken biscuits)
1/2 cup cornflakes
1/2 cup sultanas
125g butter
3-4 TBSPS condensed milk
1 tsp vanilla essence

Method:

Crush wine biscuits and cornflakes finely.
To this add the sultanas .
Melt together butter, vanilla essence and condensed milk.

Add this to the dry mixture and blend together well.

Press into a swiss roll tin.

Ice with chocolate icing. Sprinkle withcoconut or chopped nuts.
you can make variations on this mix e.g add coffee syrup and ice with coffee icing, replace vanilla essence with lemon juice and zest and omit sultanas, and ice with lemon icing.
