hi there, i am doing the wedding cake for my friends wedding in october. she wants a cupcake tier kinda thingy...anyways other than multiplying a cupcake recipe for 12 by say 15 does anyone have a good bulk recipe for me?? or do i have to make them all in batches of 12-18??? i do realise the dynamics of multiplying a recipe by 15 will alter the outcome...hence the request..cheers in advance =)

Since you probably won't be able to bake them all at once and you'd have to have a fairly impressively-sized bowl to do the lot at once you're best doing smaller batches - perhaps so you do 3-4 batches of batter. Depending on what flavour cupcakes you're after I can offer some possible recipes - both chocolate. The first is a plain chocolate cake - very cost effective - and a single recipe makes 32-36 cupcakes, so you could double and make three batches, or do 6 singles (you would still need a pretty large bowl to double it). http://www.mrscake.co.nz/2010/10/chocolate-cupcakes-and-mrs-cakes.html The second is chocolate mud cake - more decadent (and has been made for wedding cakes many times over). I haven't actually counted how many cupcakes this makes - probably about 40 - but it does make nice cupcakes (just reduce cooking time). http://www.mrscake.co.nz/2010/11/chocolate-mud-cake.html
