Tender pork chops in the pan?

How do you do yours? How long?

First I dust the chops with seasoned flour,shake it off and I fry them quickly over a fairly high heat.I use rice bran oil.Then turn the element right down,add a splash of water and immediately place a tight fitting lid over the pan.Then cook slowly until they are cooked to your liking.Generally it takes about ten mins.Gorgeously tender meat with a golden crust.Make sure you don't use too much water,I probably use about 1-2 TBS,no more.

Edited to add:I serve these with finely diced and peeled Braeburn apples which I cook quickly in the microwave.I add a little sugar and cinnamon to the apple.

Do not cook for too long as you will dry them out.Pork does not have the nasties as in the past which meant pork had to be cooked really well.I cook on a fairly high heat and then rest in a low oven for a while.

marinate for half an hour with crushed garlic, rosemary, olive soil, salt, pepper and lemon juice.Awesome on bbq but just as good in pan or oven

Start them in pan both sides then 8 mins in moderate oven.

When you fry yours initially, do you cook them through or just brown them?
