Porridge muffins

Recently there was a recipe for these. I made them several times and they are delicious. Include gratedapple, coconut as well as 1 cup of cooked porridge. Unfortunately I lent this recipe and it hasn't been returned. Can anyone help please?

PORRIDGE MUFFINS
BOWL 1
1/2 C Oil
1 Grated Apple
2 Eggs
1 C Cooked Porridge
1/2 C Sultanas
1/2 C Coconut
1 tspn Van Ess
Mix till no lumps.
BOWL 2
1 C Flour
2/3 C Brown Sugar
1 tspn BP
1 tspn BS
1 tspn Cinnamon
Mix well.
Add Bowl 2 to bowl 1 and just mix.
Spoon into muffin tins.
Bake 15 mins at 180

oks! I must admit I haven't made these yet but have made another I got at the same time:)

Sooo glad your enjoying them, makes me think I have to make porridge in the weekend to make them!!

Fibre Muffins
BOWL 1
1/2 C Sugar
1 Tbspn BP
1 1/4 C Flour
Mix.
BOWL 2
2 C All Bran
1 1/4 Skim Milk/Milk
Stand 5 mins
add to bowl 2
1/2 C Apple Sauce
1 Egg
Mix.
Add bowl 1 to bowl 2 and just mix.
Spoon into muffin trays.
Bake 20 mins at 200
You can add spices, dried fruits etc or even chopped apple, pears to this.

I added raisins tothese and they are good. Hidden healthy food for those teens that are not into healthy foods!! hehehehe

Which reminds me, my dd didn't want to try a new recipe, (a muffin) but refused as she thought they had wholemeal flour in them. I swore that they didn't as I had run out of that flour (sent her into pantry to prove it!!) Sooo, she did try and then said hay! these do!! To which I said again, they didn't but as I ran out of wholemeal flour, I used bran instead!! hahahahahahaha The joys of good food and kids!! hehehehe But still won as she as always loves me baking!!

BREAKFAST MUFFINS

Ingredients
1 1/4 cups (275g) caster sugar
2 cups (300g) plain flour
2 tsp ground cinnamon
2 tsp baking powder
1 cup sultanas
1 cup desiccated coconut

2 cups grated carrot
1 cup grated apple

1 cup chopped walnuts (or any nut you like)

3 eggs

1 cup (250ml) vegetable oil
1 tsp vanilla extract

Icing sugar, to dust

Method
1. Preheat oven to 180degC.

.
2. Sift sugar, flour, cinnamon and powder into a large bowl.

Add sultanas, carrot, apple, coconut and walnuts.

In a separate bowl, beat together the eggs, oil and vanilla.

3. Add to the dry ingredients and fold until just combined - do not over mix.

4. Spoon into muffin pans and add some nut pieces or sunflower seeds on top and bake for

25 minutes or until golden brown.

Serve dusted with icing sugar.
