I've stewed the pears ready to make the sponge topping for dessert tonight. Should I pour off the liquid first or how could I thicken it?

I like to have liquid in mine just enough to cover the pears. The sponge absorbs quite a bit of the moisture so you will need some left to eat with

Thanks. Thats good as I made stewed them with honey and a little lemon rind and it tastes rather nice.
