Does pesto have to have parsley or is basil enough. Also is it ok to use half parmesan and half edam cheese?

Straight basil pesto is delish! As for the cheese - I think the edam may change the texture/consistancy of your pesto as parmesan is a dry cheese. If you are making it to use today I think it would be fine but for longer term storage I personally would not add the edam.
