Ginger & Cashew Rice Salad

Ginger and Cashew Rice Salad
2 cups Rice
1 tablespoon Margarine
1 to 2 teaspoons curry powder
Cook rice until tender, drain and add margarine and curry powder. Leave to cool.
Chop:
1/2 cup glaze ginger
four sprigs spring onion
1/2 orange pepper
1/2 red pepper
sprig parsley
fresh coriander
add to rice
add:1 cup cooked green peas
1/2 cup dessicated coconut
1/2 tin drained chopped pineapple
stir and then add
balsamic vinegar to taste (about 1/4 cup)
pepper and salt
Sprinkle cashew nuts on top and refrigerate.
A delicious easy to make recipe which keeps well. may be made the day before. Enjoy!
