I have about 7 hours to cook it, what setting do I use, high, low or auto? I do not have an instruction book,

Low, as 7 hours is quite a time to cook! High may be a bit much. You could even, start on high, and then lower temp down to low once bubbling.

Auto - this starts out as high then drops to low for the majority of the cooking time.
