Gluten free sweets

I'm in a predicament, my Mother has been told to try going gluten free for a couple of weeks by her specialist, unfortunately this is over Mother's Day, and I wanted to make her a bag of sweets (she doesn't want presents), but as I don't have any gluten free products, are there any recipes that I could use that don't require any different ingredients?

Rocky Road - but use the small gluten free marshmallows you find in the baking aisle - Pascalls are rolled in wheat flour! Apricot balls - no biscuits see recipe attached. Dip them in plain chocoltae for more decadent look!

Hi, Id be wary of making fudge, unless you use pure vanilla.Hansells say theirs is gluten free but after talking to their lab. technician she told me that as they import the alcohol base they cant guarantee its gluten free. Also some people react to cocoa.
I make coconut ice using 3 cups of gluten free icing sugar (Chelsea), 1/2 cup milk (I use goat milk), 1oz butter, 1/4 tsp salt, 3/4 cup coconut. If I want to colour it red I use a beetroot juice. Then just follow the recipe in the Edmonds Cookbook.
Butterscotch would be okay, as would Russian Fudge (if shes okay with sweetened condensed milk and golden syrup). If she likes toffee you could make the recipe on page 173 (it doesnt use vinegar).
Hope these ideas help you.
