Hi, I have a bucket of beetroot from the garden, and no jars!!Am I able to freeze the beetroot whole?I am guessing I can then roast it later maybe? Thanks :-)

I cooked mine made a brine put it in plastic containers and put in freezer Tried it last week and it was lovely Actually been in the freezer since last year

Yay!By brine, do you mean the vinegar mix?

I cook it up with water....save water, peel then dice or slice beetroot, pop into containers and cover with the juice.As needed thaw and make up the vinegar brine.
