How to prepare chillis for sauce?

I am about to make a chilli sauce for the 1st time. Do I need to remove the seeds? The recipe says nothing about the preparation of the chillis. Many thanks

Are they long chillies? If so, try a Jalapeno corer or slice in half and remove seeds and veins with a small paring knife. Use fine latex gloves if these are hot peppers so that you do not irritate your skin.

There is no need to remove the seeds unless you want to make a very smooth sauce.If you want to reduce the heat from the chillies then strip out the seeds and the membranes that they are attached to.It is the membrane (called placenta) that carries the most heat, not the seeds.

I made your sauce yesterday and it is GREAT. Recipe below for others who may have missed the recipe.I bought budget brand tomato sauce. It made 6 and a half jars so I was really pleased

This is the sauce I make, it is very similar to the Sweet Chili Sauce you buy.

HOT CHILLI SAUCE

40 Chillies, 2 large cooking apples (or can of precooked), 3 cloves of garlic

Process all of the above in whiz

Add 1 tbspn plain salt, 2 1/2lbs sugar, 750mls of malt vinegar

Simmer all these for 25 minutes to ½ hour. Add 1 ltr can of tomato sauce.

Simmer another ½ hour, Bottle and cap when cold.
