Yummy meatloaf recipe needed

i would like it to be so tasty they want more, the one i have tends to dry out a bit..and a nice sauce to go on top, well it cooks..

500g sausagemeat, 500g mince, 1 finely chopped onion, 1 egg, 1 cup breadcrumbs, 1 or 2 grated carrots, S&P - mix all together and put into your dish. Top with following mixed together: Half cup of tomato sauce or relish, 1 tbsp brown sugar and 1 tsp prepared mustard.

500gr uncooked mince
450gr sausage meat
1c fresh breadcrumbs
2 chopped onions
2tsp curry powder
1 large clove crushed garlic
seasoning
2tsp dry mustard (opt, I use this so onions don't repeat)
1 egg
Combine all in a large bowl. Gradually add 1/2c milk & 1/2c water, beat until smooth. Place in a greased roasting dish (I use a casserole dish)& shape like a loaf.
Bake 180 for 30mins.
Pour off excess fat & add BBQ sauce as follows:
1/2c water
1/4c worcester sauce
1/4c br sugar
knob butter
1/2c tomato sauce
2TBSP vinegar
1tsp instant coffee
2TBSP lemon juice
combine all ingredients in a saucepan, bring slowly to the boil,reduce heat & simmer 5 mins.
Pour over loaf & baste frequently
Contine cooking uncovered for 45 mins

crisynz, I recommend trying this one, it dosen't have a sauce but is extremely moist, if you don't want it too spicy just cut back on the tabasco!
Cajan meatloaf
• 2 Whole bay leaves
• 1 T salt
• 1 t cayenne pepper
• 1 t black pepper
• 1/2 t ground cumin
• 1/2 t ground nutmeg
• 4 T butter
• 1 C finely chopped onion
• 1/2 C f celery finely chopped
• 1/2 C finely chopped bell pepper
• 1/4 C chopped spring onions
• 2 t of minced garlic
• 1 T tabasco sauce
• 1 T worcestershire sauce
• 1/2 C milk
• ½ C tomato sauce
• 2 packets sausage meat
• 2 eggs lighthy beaten
• 1 cup very fine dry bread crumbs

Cooking Instructions
Combine bay leaves, salt, cayenne, black pepper, cumin and nutmeg in small bowl and set aside. Melt butter in pan and add onions, celery, bell pepper, spring onions and garlic and cook until soft. Add Tabasco, Worcestershire and seasoning mix, cook a further 2 minutes then add milk and tomato sauce and cook for another 2 minutes then remove from heat. Put sausage meat in large bowl and add eggs,breadcrumbs and cooked spice/vege mixture. Place into greased loaf tin and cook for 1hr at 180 C. Serve warm or cold with a green salad.

Family favourite:Microwaved Glazed meat loaf.MEATLOAF INGREDIENTS 250g sausage meat, 250g mince, 1 finely chopped onion, 1 tspn curry powder, 1/2 cup fresh breadcumbs, salt and pepper. 1 tblspn chopped parsely.GLAZE INGREDIENTS: 60ml water, 1 tblspn worcestershire sauce, 1 tblspn lemon juice, 2 tblspns brown sugar, 60 ml tomato sauce, 1 tblspn vinegar, 1 tblspn oil, 2 tspns cornflour.Combine all ingredients for the meat loaf.Mix together thoroughly.Form into a loaf shape.Place in a greased pyrex baking dish.Bake on full power, covered lightly (I use greaseproof) for 10 minutes.Pour over glaze, made by blending all ingredients together well, re cover to prevent splatters bake on full power for a further 10 to 15 minutes.Baste from time to time during the last 10 minutes of cooking time.Let meat loaf stand, covered with tin foil for 10 minutes before use.

MEAT LOAF WITH APRICOT SAUCE

1 Large onion chopped and cooked in a little butter in the microwave

add that to a large mixing bowl

1 teaspoon of crushed garlic

1 teaspoon of fresh ginger

1 tablespoon of HP sauce or tomato sauce

good dash of worchester sauce

good dash of soya sauce

1 teaspoon dry mustard powder

also I add a small spoon ful of made mustard I use Coleman Hot English plus beef stock powder and any other you might like to add for flavour

2 tablespoons of brown sugar

2 slices of bread cubed

2 eggs

1 kg of mince

1 pkt Maggi Mushroom gravy

1/2 cup milk

1/2 cup chopped parlsey

Mix all this together with your hands.......I use disposable gloves and then you have no smell left on your hands

Mould into a loaf shape and place in a baking dish and baste with sauce every 15 mins
Cook 1 hour at 180 C

Apricot Sauce

450 grm tin of apricots

1/4 cup malt vinegar

2 tbsp brown sugar

Whizz apricots till pulp and add ingredients.Microwave for 2 mins to mix.....

APRICOT GLAZED MEATLOAF

1 PKT MUSHROOM SAUCE MIX (MAGGI)

1 LARGE ONION CHOPPED FINELY

CHOPPED PARSLEY

1 KG MINCE

1/2 TEASPOON OF SALT

1/2 CUP MILK

1 TABLESPOON SOYA SAUCE

2 SLICED OF BREAD (CUBED)

2 EGGS

MIX ALL THESE INGREDIENTS WELL TOGETHER AND FORM A LOAF SHAPE

AND BAKE FOR 1 HOUR AT 180C OR 350F. GLAZE LOAF EVERY 15 MINUTES

WITH SAUCE.

SAUCE

450GRM TIN OF APRICOTS HALVES (SAVE 6 HALVES FOR DECORATION)

1/4 CUP MALT VINEGAR

2 TABLESPOONS OF BROWN SUGAR

PUREE APRICOTS, BLEND WITH VINEGAR AND BROWN SUGAR AND SIMMER

FOR 5 MINUTES.

SERVE LOAF WITH SAUCE. NICE EITHER HOT OR COLD.

DinnerMeatloaf with Mushroom Sauce
Ingredients
900g lean beef mince
300g coarsely chopped fresh white mushrooms
400g fresh white mushrooms, sliced
¼ inch thick (for mushroom sauce)
1 package (450g) dry vegetable soup mix
1 cup seasoned dry bread crumbs
1 egg, lightly beaten
¾ cup skim milk
2 tbs cornstarch
2 tbs butter, unsalted
900g chopped onion
1 can (400ml) beef stock
Method
MEATLOAVES:

Preheat oven to 175ºC. In a large bowl, combine mince, chopped mushrooms, vegetable soup mix, bread crumbs, ½ cup milk and egg until well combined. Form into two loaves, 7x5 inches each.

Place loaves in a shallow baking pan with rack. Bake for 45 minutes.

MUSHROOM SAUCE:

In a small bowl, combine ¼ cup milk and cornstarch; set aside. In a large pan, melt butter over high heat. Add sliced mushrooms and onion; cook and stir over moderate heat until mushrooms are golden (about 10 minutes).

Stir in beef stock and ½ cup water; bring to a boil. Stir cornstarch mixture into mushroom mixture in pan. Cook over high heat, stirring constantly, until slightly thickened (about 1 minute).
