150gm butter 1 cup sugar 1 egg 2 tablespoons brandy or sherry 1 tablespoon lemon juice 1 teaspoon vanilla 1 1/2 cups fruit puree (I use apple) 1 1/4 cups flour 2 teaspoons baking soda 1/2 teaspoon cinnamon 1/2 teaspoon cloves 1/2 teaspoon ginger 1/2 teaspoon nutmeg 1/2 cup sultanas

melt butter. add sugar and egg and beat well.Add brandy or sherry, lemon juice and vanilla. Stir to mix.Stir in the fruit puree. Add sifted flour, baking soda and spices along with the sultanas.Only mix enough to combine.I cook in a large ring tin in the microwave. 12 minutes on HIGH. Makes a big pudding. Very yummy with custard.
