Ok, so I am addicted to turkish food, love those spices they use on the meat.Question: how do i replicate at home, maybe on some chicken breasts so i can make my own pita pockets???

I don't cook meat but I do love spices, so I had a peek at this site.

fee1965, if you're in a hurry, why not look at a few of the recipes in this link and see what goes with what?There are some chicken recipes there.

Here is the recipe that I use to make Turkish kofte kebabs.You could use the same spice mix to marinate pieces of lamb backstrap, plus a little olive oil and grated onion.

Kofte Spice Mix

(Also use for chicken)

1/3 c ground cumin
1/3 c dried mint
1/3 c dried oregano
2 tab sweet paprika
2 tab black pepper
2 tsp hot paprika

Kebabs

500 minced lamb
1 clove garlic, crushed
1 ripe tomato, diced
1 tsp pomegranate molasses
1 heaped tab Kofte spice mix
black pepper
salt

Mix all and knead several minutes.Chill at least 20 min.

Mould on to skewers in fat sausages, grill until golden and completely cooked.

Serve with salad of parsley, mint, onion, lemon & sumac, with warm flatbread.

Every Turk does something different but my amca, his is just my fave. For cubed chicked breast pieces his marinade is:

Sweet pepper puree
Tomato puree
Evoo
White pepper
Smoked paprika

That's it. I'm not sure of the quantity as he makes huge batches for his shop.
