Autumn Salad with Mint Cream
1/2 med pumpkin
3 large golden kumera
3 medium carrots
1/4 cup olive oil
1 tsp all purpose seasoning
1 tbsp garlc olive oil
2 tbsp each, pumpkin seeds, sunflower seeds, and sesame seeds.
salt to tast

1/2 cup sour cream
50gm mashed creamy feta
1 tbsp chopped fresh mint
50gm mesclun salad greens

Preheat the oven to 185 c. Deseed and skin thepumpkin.peel the kumera and carrots and cut al veges into chunky, even, bite=sized pieces.
Toss the veges with the olive oil and all purpose seasoning so that they are evenly coated. arrange the veges in a single layer in a lined baking dish and roast them in the preheated oven for 20-25min, or until golden and tender.
Heat the garlic oil and toast the seeds and salt until they are toasted and popping.
Combine sourcream, feta and mint in a bowl until smooth.
arrangevegetables in a large serving platter or bowl and top them with the mesclun greens. sprinkle over the toasted, salted seeds and drizzle with the mint cream before serving.
serves 6.
