Gluten free Muffins

has anyone got some recipes for gluten free muffins please

• Zucchini & Bacon Muffins

2 ¼ cups Gluten Free Flour
5 level tspsBaking Powder GF
70g Melted Butter
3 Eggs
1 ¼ Cups Milk
½ tsp Salt
1 Small Onion, very finely chopped
1 Cup Grated Tasty Cheese
2 Slices Chopped Bacon GF
1 Tomato Chopped
1 Grated Zucchini
Method
Melt butter, then whisk milk and eggs. Add dry ingredients, add bacon, zucchini, tomato and cheese. Place in oiled muffin tins, filling at least ¾ full.
Bake at 230ºC for 15 - 20 minutes until firm and golden brown. Cool in tins for 10 minutes before removing to a rack. Are great served warm, can freeze also.
Taste best warmed in the microwave!

Nut Butter Muffins

1cup cashew, almons or peanut butter
2 small bananas
2 eggs
1.5 tsp baking soda
1 tsp apple cider vinegar

Blend nut butter and bananas.
Add eggs and blen again.
Add baking soda and blend.
Add vinegar and blend.
Divide batter into 12 lined muffin tins
Bake 10mins @ 180 deg.

These are an unusual texture in that they're different from normal muffins and are kind f springy.I also think the addition of some slivered almonds on top might be nice. I have had a choc version of these but am still trying to track the recipe down - simiar texture but also had choc chips stirred through and I guess cocoa powder or similar.

BANANA MUFFINS – Gluten Free

2 cups Bakels bread mix

2 teaspoons baking powder ½ teaspoon salt

1/2 cup sugar100g butter

1 cup milk1 egg

(1 or 2 ripe banana (depending on the size of the bananas)

1 Tbsp sugar1/2 teaspoon cinnamon

(you can also add ½ a cup of chocolate chips to make these a little more exotic, but they arevery nice without the chocolate also).

Combine bread mix, flour, baking powder and salt.

Add sugar.

In another container, melt butter, add milk and egg.Beat to combine.

Cut banana into small pieces.
(don't try mashing the banana - you don't get the same result).

Add banana and liquid to dry ingredients.If using chocolate chips, add them with the dry ingredients.Be careful not to overmix.

Divide between 12 standard size muffin tins or 24 mini muffin tins.

Combine the tablespoon of sugar and half teaspoon of cinnamon.Sprinkle over the top of the muffins.

Bake at 220 degrees C for 10-15 minutes for larger size and 10 minutes only for mini size.
