JAM
Use one sachet of King Jam Setting Mix with 1.5kg finely chopped or crushed fruit and 2 kg sugar
1. In a large saucepan add fruit* and a little water (if necessary), bring to the boil and simmer until fruit is soft.
2. Slowly add King Jam Setting Mix, stir until dissolved.
3. Add sugar, stir until dissolved, boil for 6 minutes, stirring occasionally.
4. Remove from heat and skim the top of the jam.
5. When jam has cooled sufficiently, pour into clean warm jars.
* Add the juice of 2 lemons to peach or pear jam and the juice of one lemon to apricot jam

thanks so much elliehen.this is very interesting, as have heard of many people complaining they have used the new one and their jam isnt setting.
I have never had problems before.
the difference is....OLD PKT - 2kg sugar to 1.5kg fruit.
NEW PKT - 1.750 fruit to 1.1kg sugar. and to add the jam mix at begining before fruit is soft.
Makes me wonder why the differences.
I know you need sugar to set the jam. Perhaps I may phone them tomorrow.
I am so annoyed. 20 little jam jars all with runny jam....
thanks elliehen.

have phoned hansells, they are getting back to me.
c\The lady on phone said they did cut the sugar back, but cutting back by almost 1/2 doesnt seem right to me.....most jams have equal amount of sugar per kg of fruit. is that what most recipes say.
determined to find the answer
