Hi there, do you have an original and popular chicken recipe shared on this MB? If you do, would you consider sharing the recipe in our upcoming TM Recipe Book to fundraise for assistance to those in Christchurch?

As pickles has kindly reminded us, these must be YOUR recipes to give, and even better, if you could tell us a wee story about the history of the recipe ... the history can add so much meaning to the recipe itself ... and to our TM community too! Please do add confirmation that this recipe is able to be shared in the fundraising book ....

This is my recipe for chicken fettucine

Sundried Tomato and Chicken Fettucine :)

Pack of fresh fettucine
400ml cream (or coconut cream)
100gm Sundried Tomatoes (chopped finely)
500gm chicken (strips)
1 tspn chicken stock powder
1tblspn basil leaves (chopped finely)
1 onion (diced)
200g bacon (cut small) optional
Fry chicken, add onion. lower heat and add cream basil and sundried tomatoes. simmer until cream turns slightly red (pink) add stock powder and mix (to taste). Simmer until creamy. Cook fettucine.

ENJOY!!!

Chicken Enchiladas

600g Chicken breast or boneless chicken thigh
1 can Watties chilli beans
1 tsp Garlic finely chopped
1 tsp Paprika
1 tsp basil or 1/3 cup fresh basil leaves
1 onion finely sliced
6-8 Soft Medium Tortillas
1 cup tasty cheese (grated)

Method
Preheat oven to 180'c to bake.
Cook chicken with a small amount of olive oil and garlic. As it is starting to brown add paprika and onion. Add Chilli beans and simmer for 5 minutes. Stir through basil leaves. Place mixture in the centre of the tortillas in a line and roll up. Place in a large roasting/casserole dish. Continue this until all mixture is used. Sprinkle cheese over top and bake in the oven until brown.

Serve with a garden salad

Warm chicken salad,

Take a chicken breast slice into fingers and place in a bowl and add the juice of a lemon mix and stand for 30min to a bowl add some rocket or similar some chopped corriander some finely sliced onion and diced tomato cucumber and avocado.
Squeeze the excess lemon juice from the chicken and add a beaten egg with salt stir in well and stand for 10min.
Meanwhile in a hot frypan toast some sunflour and pumkin seeds and some croutons maybe some sliced garlic too. Put aside then in same pan fry the chicken slices until golden brown and just cooked.

Add everything to the salad and toss with a generous amount of balsamic vinegar and Olive oil Then plenty of freshly ground pepper.
