Alison Holst's Easter Muffins

Alison Holst's EASTER MUFFINS, a tried and true easy alternative to hot cross buns

Heat oven 210*C, tray just below middle
Measure in bowl 1 cup dried fruit (sultanas, currants, mixed fruit)
Add:
2 cups self-raising flour
1 cup firmly packed brown sugar
1 Tablespoon cinnamon
1 Tablespoon mixed spice
1/2 teaspoon ground cloves
1/2 teaspoon salt
Toss to mix thoroughly

Put in container:
1/4 cup canola
1 large egg
1 cup orange juice
Beat with fork

Fold wet into dry ingredients until just mixed (don't over-mix)
Bake 12 - 15 minutes
Stand 2 to 3 minutes
Put on rack & place in plastic bag as soon as cold
Warm briefly to serve (optional)

NOTE: For richer muffins replace oil & salt & juice with 50-75 gms melted butter & 1 cup milk

Serve with BRANDY BUTTER
Beat 50 gms soft butter
1/2 cup brown sugar
1 teaspoon nutmeg
1 -2 Tablespoons brandy
Refrigerate, but serve at room temperature

I did make buns in the past, but don't bother now.I'm sure otherswill come along with their favourite recipes :)

I once stayed at at B/B and for breakfast the host gave us the most delicous warm spicy muffins.
BUT she had soaked the sultanas in some rum the night before.
they were oh so yummy.

Rum and Raisin muffins
.
75g butter1½ cups flour
½ cup sugar1 tsp baking soda
1 egg1 tsp cinnamon
½ tsp nutmeg

1 ½ cups of raisins cut in half, Stir through 3 tablespoons rum and soak overnight or longer

Cover with water and boil for 10 minutes.Reserve the liquid and leave it to cool.Cream 75 g butter with ½ cup sugar, and then add one beaten egg, then ½ cup raisin liquid. Next add 1 ½ cups of flour, 1 tsp baking soda, 1 tsp cinnamon, ½ tsp nutmeg then lastly the raisins. Bake in mini muffin tins at 165 c for 15 minutes. Makes 44 to 48 mini cakes Great for a Christmas (or any other) "Coffee mornings”

calista...that looks like a treat.A Christmas visitor brought a litre of rum from Barbados - the famous Mount Gay Rum, first made in 1703 and the tipple of British sailors (there's half a litre left!).I could happily eat a muffin with rum-soaked raisins.Could probably stir them through vanilla ice-cream too :)

I remember making these muffins when my kids were little, I think i will have to make again, revisit old traditions. YUMM!!!
