Mornay sauce recipe please

I want to make a scallop mornay but would love the recipe with wine in it please, I have checked out various recipes on computer but they are either too plain or just have too many ingrediants, a good tried and true one would be appreciated. I have to provide this mornay for a barby we are having in a couple of weeks and do not want to muck it up. (20-30 people)

vtired, the following are from Trademe Cooks.....

"Creamy Scallops
12 scallops .. 1 small onion , finely diced ...1/4 cup white wine ..1/2 cup cream ..1 tbsp butter.. Fry diced onions in butter until soft...add wine and cream and simmer for 5 mins... Stir in the scallops and cook for 3 - 4 mins.... When clear part of scallop turns white, season with salt and white pepper and serve.posted by fisher"

"Scallop mornay-a nice change
Poach the scallops in white wine for a minute,strain,but keep the juice.Make a basic white sauce with grated cheese,parsley,and minimal milk and use the scallop/wine juice to thin instead of milk.Put in individual ramekins,top with grated cheese and breadcrumbs and grill.Enjoy! posted by midget8"
