I got a bit carried away with quantities and made far too much. Can I freeze it or maybe keep it in the fridge in an airtight container for future use? Waste not want not as mother used to say!

Yes, freeze it. Anything so long as you do not eat it.

I've found cream cheese goes grainy and splits when frozen, it may be a different story for cream cheese icing.

If ti splits on thawing, just beat it with a spoon.I always freeze leftover cream cheese icing.
