Tried and True Mint Jelly recipe need please

Have scrubbed the bbq down, picking up lamb chops this arvo but love the ole mint jelly with this and would like to make some.If you have a tried and true (and preferably idiot proof) recipe I'd love to have it! TIA ...

Digby Law's MINT JELLY
"This is delicious with cold meats, especially mutton or lamb."

1 cup each of malt vinegar, water and finely chopped fresh mint
2 tbsp sugar
4 tsp powdered gelatine

Bring the vinegar, water and sugar to the boil, stirring until the sugar is dissolved. Boil for a few minutes. Sprinkle the gelatine over a little cold water, let stand for a few minutes to soften, then stir it into the vinegar mixture until it is dissolved. Add the mint. Remove from the heat and allow to cool, but not set. Spoon into small, clean jars and cover.

Here's one from this Message Boardfrom noonesgirl that I used over Christmas.It is in a sealed glass jar in the fridge now and still looks and tastes good.
Mint Jelly
1 cup white vinegar
1 cup chopped mint
1 cup boiling water
1 pkt lime jelly
Dissolve all together, stir continually until nearly set. Keep in fridge with lid on it.
