Turtle Cheesecake... . Crust: 125g butter or margarine, 2 c Vanilla bicuit crumbs. First layer: at least 40 caramel squares (jersey is okay) 1/4 c evaporated milk & 1 c chopped Pecans toasted. 2nd layer: 500g light cream cheese softened, 1/2 c sugar, 1 tsp vanilla essence & 2 large eggs. Also 1/2c Chocolate chips plus a chocolate glaze (next recipe). Garnishing and/or toppings extra-optional. Melt butter in small saucepan, add crumbs, stir well, press into bottom 22cm springform cake tin. Bake at 175c for 5 minutes. Cool. First layer, Heat caramels & milk in medium saucepan stirring often until smooth. Pour over crust Sprinkle with Pecans.

Chocolate Glaze. Smooth, rich, easy to double! ! ! Heat 3/4 c cream or evaporated milk in small saucepan on low. Add 170grams cooking chocolate (broken into small pieces), sti constantly on heat until melted, blended and smooth. Ready to use.

Turtle Pie (need a pre-baked pie shell). 1 C choc chips, 3 tbsp evaporated milk, Baked 22cm pie shell, About 32 caramels (jerseys are ideal), 1/3c extra evaporated milk, 1 c chopped Pecans toasted and another tbsp evaporated milk. Melt choc chips and first milk in small saucepan over low heat stirring until smooth. Reserve 3 tbsp of mixture aside. Spread remaining choc mixture over pie shell. Chill well. Melt caramels and 2nd amount of milk stirring until smooth. Pour over hardened choc layer in pie shell. Sprinkle with Pecans, pat down gently. Stir reserved choc mixture with 3rd amount of milk. Drizzle in diamond pattern over all. Chill until caramel layer sets. Cut into wedges. Can decorate with knobs of whipped cream around the outer part of top with a pecan in each knob of cream.

Chocolate martini

chocolate sauce
200ml pouring cream
30g caster sugar
1 teaspoon vanilla essence
100g dark chocolate buttons

vanilla syrup
200g caster sugar
200ml water
1 vanilla pod, scraped
1 x 4cm piece lemon rind

chocolate martini
2 tablespoons chocolate sauce
100ml coconut cream
200ml milk
60ml vanilla syrup
1 cup shaved ice
whipped cream and grated chocolate, to decorate
METHOD

To make chocolate sauce, place cream, sugar and vanilla in a medium saucepan and bring to the boil. Pour boiling mixture over chocolate in a medium bowl and whisk until smooth. Cool at room temperature.

To make vanilla syrup, place water, sugar, vanilla and lemon in a small saucepan and bring to the boil. Refrigerate until cold.

To make chocolate martini, place chocolate sauce, coconut cream, milk, vanilla syrup and ice in a cocktail shaker; shake well together and strain into a glass.

To decorate, top with a little whipped cream and dust with grated chocolate.

Chelsea Chocolate Fudge 2C chelsea white sugar, 2T cocoa, 1/2C milk, 25g butter, 1/2t vanilla essence. Place the sugar & cocoa into a saucepan & mix to combine. Add the milk & butter. Heat gently, stirring constantly until the sugar has dissolved & butter melted. Bring to the boil. Let the mixture boil without stirring until reaches the soft-ball stage (120C). Remove from heat, add the vanilla & leave to stand for 5 min. Beat with the back of a wooden spoon until thick & pour into a well-greased tin. Mark into squares, cut when cold

Chocolate Mint Squares.

(A very simple recipe)

1 1/2 c sugar,
3/4 c evaporated milk,
2 tsp glucose syrup,
1 tbsp butter,
100g marshmallows,
225g dark chocolate,
4 drops peppermint oil,
100 g chocolate.

Combine sugar, milk, glucose and butter in saucepan.
Stir constantly over low heat until sugar is dissolved.
Increase heat, simmer for approx 10 minutes or until mixture is soft ball stage, stirring frequently to avoid sticking.
Remove from heat.
Add roughly chopped marshmallows, dark chocolate and peppermint oil.
Stir until melted and mixture thickens.
Spread over 23cm square tin which has been greased and lined with greased paper.
Refrigerate until set.
Melt last measure of chocolate and spread over mixture.
Cut into squares when set.
Serve with coffee.

Highlander Fudge Cake

Makes 21 pieces thereabouts...

2 1/2 c plain biscuit crumbs
1 c coconut
1/4 c chopped raisins
2 tbsp cocoa
1/2 cup Condensed Milk
100 g butter
1 tsp vanilla essence and
chocolate icing ( recipe follows ).

Combine biscuit crumbs, coconut and raisins.
Mix cocoa and condensed milk in a small saucepan.
Add butter.
Heat to boiling point, stirring constantly.
Remove from heat.
Stir in vanilla.

Pour condensed milk mixture into dry ingredients.
Mix well.
Press into greased shallow 20cm square tin.
Ice with choc icing.
Cut into bars when firm.

Chocolate icing
1 1/2 c icing sugar
3 tbsp cocoa
3 tbsp butter softened
2 tbsp approx boiling water
1/4 tsp vanilla essence.

Sift icing sugar and cocoa into a small bowl and add butter.
Pour in water and add vanilla.
Mix to a spreading consistency, adding a little water if required.
