Healthy lunchbox baking ideas?

I've done wholemeal fruit muffins and the weetbix/rice bubble/apricot slice I found here (yummy - thanks!)...anyone got any other goodies that are "kind of" healthy??!

Yep...Mini ABC Muffins (Apple/banana/chocolate chip)

1c Mashed Banana
1/2 c Brown Sugar
1/4 t Salt
1/4 Canola Oil
1 Egg
1/2 c Milk
1/4 c Choc Chips
1 Apple Grated (Unpeeled)
2c Self Raising Flour

In bowl mix Banana, sugar, salt, oil, egg and milk.Stir in chocolate chipsand unpeeled apple that has been grated.Stir flour in its container to loosen (don't compress it).Using a spoon sprinkle the flour on top of the mixture and then fold in.

Bake 10-12min on 210 C

Bliss Balls

1 C chopped Dates
1 C Raisins
70g Walnuts
1 Tspn Cocoa
1 Tspn Butter
1 tspn Milk
1 tspn Van Ess
Coconut to roll in

Place all into food processor and whiz till smooth.
Roll into balls.
Roll in coconut and place in fridge.

Sounds soo easy!!
